Apparently, you can only play a serious game against an UCI engine, which Crafty is not. Isn't it? No. As you have also said, Polyglot is an UCI adapter, that allows you to connect an UCI engine to an xboard interface, and it cannot be used the other way round. So, Im afraid there's currently no way to do what you want.
