A UUID is a particular format and scheme for generating unique
identifiers.
If all clients use the same scheme, then my understanding is that the
chance of a collision is very tiny indeed - Wikipedia has various
suggestions about explaining how unlikely it is.
In practise, though, unique rooms could easily be made a distinct
feature without any problems, and they're not a difficult thing to
implement server-side.
The harder problem is deciding which MUC service to create such a
room on.
