I only shoot RAW, so I never use AWB and don't have to correct colour
temperature during conversion, however I shoot a lot of photography
that's colour sensitive.

The difference between our work flows is that you are likely aiming
for a visually pleasing colour balance whereas I'm often aiming for an
accurate and repeatable colour balance. The easiest methods to ensure
accurate colour balance are to shoot a reference card under the light
then base subsequence images on that or to convert with reference to a
known WB. Using AWB you loose this absolute reference and over time
may also forget what the prevailing light was at the time so pre-sets
also lose their value.
