I have had similar problems on 7.10 with evolution hanging. I am using Evolution with the OWA Adapter to hook into Exchange Server.
My problem was that when I was typing emails into the TO/FROM when writing an email, the autocomplete would show but then immediately hang. The entire evolution app would hang for about 2 minutes but it would always eventually come back ok. Very annoying though - to the point of unusable for everyday business. Having googled this, it seems several folks have problems with evolution hanging in general. As an earlier post suggested, turning off the Pidgin synchronization helps. However, that wasn't my problem. I was able to workaround my problem by turning of all syncrhonization with the Excahgne Global Address book: Edit / Preferences / Uncheck the "Global Adddres Book" and any other address book under your outlook account. So I use only my local contacts folder and avoid the exchange contacts because I think its the network calls hanging which causes the UI to hang. This is annoying as you do not have your contacts but it can be alleviated by using "Automatically create entires in Address Book when responding to email" and make sure to use ony your *local* addresd book. Set this up under Edit / Preferences / Mail Preferences / Automatic Contacts. So you can quickly rebuid your address book locally. I've been using evolution/owa for about 18 months. In general, evolution (or OWA) is buggy in the way it does multithreaded. Or rather, it does not do multithreading. It often does network invocations (say to the Exchange Server) in the UI Processing thread and so the user preception is that the program often freezes and hangs. This is a real shame becuase if this could be fixed, it would be an excellent appilcation. It is so close to being excellent.
