Yes you can use Sendmail/Procmail to deliver to maildirs. No, you cannot use the UW pop server because it does not understand maildirs BUT you can use the courier POP server that comes with the courier-imap application. There are many mbox to maildirs conversion programs around so converting is easy. You are correct about the Courier application suite doing everything (sendmail, procmail, imap, pop, and even webmail) but you don't need to implement all of it if you don't want to.
