SquirrelMail did not create those files - your IMAP server did.
(Incidentally speaking, I personally would choose three monkeys using an
abacus over uw-imap)

Calendaring is saved in SquirrelMail's data directory.  (username.cal, i
believe).  The subscription list and folders are maintained by the IMAP
server, along with all the messages themselves.

SquirrelMail does not require any local users to be created.
