It sounds like you're afraid of the change. Sendmail is a good program, but complex in comparison to postfix. Postfix was created as a drop-in replacement for sendmail with security, scalability, ease-of-use and performance in mind. As it's matured, Wietse had done a great job of meeting those design goals. Yes, you do have to uninstall sendmail to get postfix to work, but that doesn't necessarily mena that you have to have a non-working mail server while you configure postfix. Hence the "drop-in replacement" aspect. If you read the documentation for postfix before starting, you'll see that there are a few tables you can create before hand that you will need postfix to run. The tables that postfix uses are basically lists that make a lot of logical sense, and they are neither complex nor convoluted. Every domain requires a virtual table that matches recipient to user, and a list of domains goes into a relay-domains table. Sample tables are included both with the source and the binaries. If these are created beforehand, the time to set up postfix can be brought down to a couple minutes in the change-over where most users won't even notice that anythng has changed. OTOH, IIRC uw-imap doesn't need to use Maildirs, but there again Maildir has many benefits and that's why it's gained so much in popularity. Even people who don't like DBJ admit that Maildir not only makes sense but prevents a lot of problems that other storage formats are vulnerable to. If I was you, I'de just go ahead and ride the changes.
