The only dependable way I've found to make messages from Outlook
and Exchange truly plain text is, in the Message window, pull
down the File menu and click Properties, then Send Options.
Under Attachment Format, select UUEncode.

are using Exchange as your mail server, you may need to contact your exchange
admin. There is a setting in Exchange that forces mail to be sent as HTML
regardless of what the client is set as.. He may need to turn that off as it is
probably not a good idea anyway

Mutt can use something like lynx or w3m (my choice) to convert html
