If you have set all your exchange options to not post in html and you
are still posting in html then you email server, the 
"Internet Mail Service" mentioned in your email headers is the culprit
changing your emails to html format.

If you can't access the IMS server directly yoursel;f to change the
settings, find your IT person who can.

Here are some instructions which mnay help but I have no way to test
them, good luck.

Here are the instructions for setting your Exchange Internet Mail
service program up so it won't send HTML emails out:
Using the controls described on this page, simply select "Never" or disabled
or No for all rich text, MIME or HTML options
