There is no way to choose a directory.

Go to Options / Book Directory and Options / Bases Directory and point them to the dir where you stored your opening books (in polyglot/fruit format) and the scid-DB's for tactical training. These dirs may even be empty but they should point to a valid directory.

(BTW: This is not a MAC specific issue but a general one.)
