I know this is going to arouse a chorus of boos from the audience, but try using Linuxconf... I've had no problems getting NFS Server working using it, nor have I had problems getting NFS Client working using it. It might not be the best tool, but it does have some thought behind it. Don't forget to specify which machines you want to Serve too, though... you don't want to serve to the world if your machine is connected to the Internet!
