It does. I've installed 6.1 in both graphical and terminal mode, and
you can definitely add swap partitions in Disk Druid. Tab to "Add",
enter the amount of space you want to give to the partition, and then
tab over to the filesystem type, and make it "Linux Swap".

I'm not sure what you mean, I've installed Red Hat on systems with PS/2
and serial mouse without any trouble. If you don't have one of the mice
listed there, there should be a "no mouse" selection. (Honestly, this
one I don't remember). If there weren't, you'd be able to select Serial
mouse and continue on.
If you have any problems at all, get the errata boot disks.
