Are you running the latest kernel?  I had problems with the early 7.[23]
kernels with kswapd chewwing up all the cpu after being up a while.

you might want to run sar as it will write a bunch of system stats every
10 minutes to /var/log/sar/ so you can get back in and look at what was
happening on the box prior to it crashing.

Of course it could be bad hardware as already mentioned.
