Are you using the aic7xxx module? If so, you may be having the same problem I've had with that aic7xxx driver since RH7.1. Basically, I was getting continuous resets on the bus to the point that the command queue was exceeded and the kernel finally panics. This may take some time and it seems that during this period the system has hung.
After Google-ing, Yahoo!-ing and Altavista-ing I found a similar reference on Red Hat's Bugzilla. Not the same, *but* it seems to have helped my problem. I've had this on the Adaptec series including the AIC7880 in an HP NetServer LD Pro and AHA-2940U2 and AHA-2940U2W adaptors. Origionally, the aic7xxx_old seems to have worked, but here's the solution that I found: Install with the "linux expert noprobe" and select the aic7xxx (the new one) module. When asked what parameters to pass, add "no_probe". After doing this my RH8 build seems to be working. YMMV! Good Luck!
