Congrats, a great camera. I've got a 645 Super with 4 lenses myself.

As to B&W films, for low ISO Fuji Neopan Acros is simply wonderful in
120. And I'm partial to Ilford PanF+ as well. For fast B&W film I tend
to push HP5+ or Tri-X rather than use any of the fast films, I prefer
the results of the pushed traditional-grain films over the
ISO1600-3200 films.
