Try applying a very subtle burn to the edges of the prints to bring them 
down just a bit. I tend to use off white mats, I tend to go for ivory or 
similar. It makes the whites sparkle a bit more. My experience has been 
that if the mat is approaching the same colour as the paper base, the 
print will tend to look dull.

You could also try using an open window matting, where the mat is an 
inch or so away from the edge of the image.
