Add table/stats with a DataSketches Theta-sketch wrapper for computing number-of-distinct-values, byte-compatible with the sketches Iceberg-Java stores in apache-datasketches-theta-v1 Puffin blobs. Pins the same seed (9001), lgK (12), and compact serialization, and adds read/merge helpers.
