Prototyped running `catalogtest` against Apache Polaris as a second REST implementation (opt-in via `POLARIS_URI`). All 24 conformance tests pass against `apache/polaris:latest`. Polaris also hits the rename-to-existing 409 issue fixed in #2165. Would maintainers want a Polaris service added to `internal/recipe/docker-compose.yml` so it runs in the integration job, or keep it opt-in?
