Apparently not in my case.  My mail server only has some admin
accounts not all of our user accounts.  No NIS or NIS+ either.
I'm thinking that the only way it knows of "esanborn" is via
Cyrus...

Actually, I believe that sendmail by default uses the Password/Shadow
file (PAM) for authentication. It should also check here for users. This
means that if you remove the login/passwd for this user in the
passwd/shadow file then mail will no longer be routeable to this user.
Then you don't have to worry about cyrus. 

Basically I see removing a user from cyrus is only done for "house
cleaning" to free up space, and isn't really necessary, once the MTA can
no longer deliver.
