Depending on what MTA you are using, you can just remove the user. Exim will lookup the user to see if they exist, before attempting to deliver the email. Therefore, if you change the name/remove the user, then any mail will bounce.
As long as you don't touch the actual directory that the user owned, you won't lose the email. You can cp that directory, and delete the user using cyradmin.....
