As a follow up in case it helps someone else: In the end I've ended up running the Win32 version (app_id 205) under Wine 1.7. My Ubuntu 12.04.2 LTS shipped with an older version of Wine (1.4 iirc) that crashed frequently and rendered the Windows srcds manager all but useless.
* Install vnc4server for X support (required as -console wants an X console anyway) * Install Wine 1.7 from http://www.winehq.org/download * VNC in to the new X vnc console * Install ("Source SDK Base 2006 MP dedicated server") app_id 205 using steamcmd * Plunk the game mod in, and run it as normal. So far it's proving to be stable and is also running Metamod and Sourcemod. The only issue I'm having is not being able to use -console, but I'll get over it. Time to get back to real-work.
