As said, GCDROM was a minor fork of a predecessor of UDVD2 and UDVD2 long since incorporates the abilities of GCDROM, so there is no need to keep GCDROM around. What makes you think GCDROM would be easier to use for learning to write new drivers? If you want THAT, you should read the ELTORITO sources, which are very small given that half of the work is done by BIOS :-) If you insist, you can of course keep GCDROM on "bonus". There is a new UHDD update coming soon: It is smaller and allows more flexible choice of cache size, which means that even for boot floppy and low-RAM systems, you no longer have to ponder using UIDE or LBACACHE. I would recommend to move UIDE to "full" or "bonus" while moving UHDD to "base". If that clashes with LBACACHE already being "base", move that to "full".
