This solved it :
$ sudo apt-get install -y gnome-shell-extension-ubuntu-dock

The dock with apps is back to the left of the screen, and the Settings >
Ubuntu Desktop is working again.

Launching gnome-control-center doesn't throw warnings anymore.

All seems to be in order now.
