This solved it : $ sudo apt-get install -y gnome-shell-extension-ubuntu-dock (Source : https://www.reddit.com/r/Ubuntu/comments/uaw9gp/missing_dock_in_settings/ )
The dock with apps is back to the left of the screen, and the Settings > Ubuntu Desktop is working again. Launching gnome-control-center doesn't throw warnings anymore. All seems to be in order now.
