If one needs specific program, installing a non-packaged version is
always an option.

Using a secondary packaging system, like Nix for example, for individual
specific programs, is also an option.

I confirm. On a personal computer, you can do the upgrade and fix the
details that break along the way. In a school, you cannot expect
students to do it (and you should not give them the privileges to do it
in the first place) and you cannot come do it during the lessons.
