It is, in theory, possible to start from a x86 system, build an amd64 kernel, 
reboot and then walk your userland up to amd64 gradually.  However, I've 
never seen/heard of it done in practice, and it would be a tricky (read: 
error-prone) set of steps.

If you have some extra diskspace, you can even do the install in a chroot 
(debootstrap FTW!) and only reboot once it is complete, minimizing downtime.
