Sure, but how about our libavutil pakage Conflicting against all of
Marillat's packages except libavutil itself? All our packages depend on
libavutil, so this would solve half the problem.

We could do the same for our libavcodec package (conflicting against
all of Marillat's packages except libavcodec itself). This should fix
many of the problems, or do I miss anything?
I think this will result in uninstallable packages, unless I didn't
misunderstood your proposal.
Please don't add extra logic in Debian packages to conflict against
packages outside Debian. This is not scalable for a start, anyone can
start asking for more conflicts. The other way around is scalable and
logical: add conflicts in packages outside Debian against packages
inside Debian if necessary.
