Following advices from a Ubuntu bug entry, I went ahead and backed up
my xorg.conf before doing an "aticonfig --initial".
I then edited my xorg.conf to clean it (removed double entries and
made sure some of my customization stayed in (e.g. touchscreen/pen
stuff)).
And voilà, fglrx 10-3~prerelease + Xorg 7.5 now work as a charm!
You may want to try the same.

Now it would be quite nice to know, which options exactly generate this
problems, so we could document it!
Could you both send us your old (not working) and the new generated
xorg.conf?
I've forgot the last time that I use etckeeper, so I've attached the
exact copy of the xorg.conf I've used with 10-2.
This xorg.conf not worked with 10-3-pre.
