The form with 1 "n" does not appear in the official French dictionaries: https://www.larousse.fr/dictionnaires/francais/pi%C3%A9tonisation gives nothing and proposes other words. https://dictionnaire.lerobert.com/definition/pietonisation ditto. fr.wiktionary.org seems incorrect, just propagating incorrect spelling.
