I always ask a simple one ... what are actions that you have taken inside the ar system that have caused the server to crash or caused a major outage and what did you do to resolve them?
If they said they never crashed the server ... do not hire them!!!!! They have very little experience w/ developing in Remedy. I am usually able to assess their problem solving skills are, their experience w/ maintaining the arsystem, and their development skills all w/ this one question. I also get some questions about turning on/off server features using the configuration files (ar.conf/ar.cfg).
