And the fact that Microsoft's proprietary protocol also intercepts the data and 
thus also has access to the emails is enough for me!

Because EAS works, is natively supported on mobile platform apps and other 
apps. And no, EAS does *not* sync emails to Microsoft when used on e.g. a SOGo 
backend - what is your source for that statement?

For the Outlook app, when connected to third-party (non-Microsoft) email 
accounts like SOGo using EAS, do you have a definitive source for the statement?
