The installer can't sanely use language packs, and it would be an extraordinary amount of manual work for us to update all the translations from Launchpad and keep them merged when incorporating new Debian versions (believe me, I've tried to do this on a small scale in the past and it just doesn't work). I'm afraid you just have to consider the installer an exception as far as translations are concerned. In order to get the translations updated, somebody needs to coordinate with the Italian translation team in Debian to get these translations incorporated there.
