Thanks for taking the time to report an issue. It sounds like you have two different issues. At first you describe the system hasn't recognised your headset at all and then you describe the headset not being reported in the correct profile. Can you elaborate?
You've also filed this against Pulseaudio, but it looks like you're actually using Pipewire. Please reference https://gitlab.freedesktop.org/pipewire/pipewire/-/wikis/Troubleshooting#general to provide more actionable information for the triaging process.
