Interesting to see simpledrm (software rendering) being used for the
integrated GPU there, and yet nvidia-drm is still active for the
discrete GPU. Presumably you ran that command in recovery mode. So I'm
surprised you get a working hybrid GPU configuration from simpledrm but
not from i915.
It still seems likely to me that the main problem is the failure to load
the Nvidia driver. So even if you did install it correctly, it's not
functioning correctly.
Next I would recommend:
1. Go back into 'Additional Drivers' and remove the Nvidia driver
completely (ie. switch to Nouveau).
2. Reboot.
3. Make sure the system works with Nouveau without requiring recovery
mode.
4. Install a new Nvidia driver via the 'Additional Drivers' app.
5. Reboot.
6. Optionally, for better performance and a semi-permanent workaround,
please consider using a USB-C ended display cable so you avoid the
laptop's HDMI port and thus avoid the secondary GPU copy path.
