Your resolution is incorrect because you have booted with the
'nomodeset' option:

ProcKernelCmdLine: BOOT_IMAGE=/boot/vmlinuz-4.15.0-43-generic
root=UUID=2d93d825-1bcb-4155-aad5-cfdb5dce95ab ro quiet splash nomodeset

So it is correct for the normal resolutions to be missing in that case.
To fix this,

1. Remove any mention of 'nomodeset' from /etc/default/grub and then
run:

   sudo update-grub

2. Reboot, but as soon as you see the purple screen appear tap Esc and
work through the menus to ensure you are not booting in recovery mode.

3. If the problem still happens after that then please attach output
from this command:

   cat /proc/cmdline

** Changed in: xorg (Ubuntu)
       Status: New => Invalid

** Package changed: xorg (Ubuntu) => ubuntu
