I've had a chance to revisit this today.

Part of the problem seems to be related to how the installer is seeing
the 4k/4k disk.

The 4k/4k sector disk is 1TB in size, however, the partitioner only sees
the disk as 125GB.  The installer will partition this space and the
installation will continue, but, we end up with an un-bootable machine.
dmesg and syslog, however, see the full 1TB of space for the disk.

If I run a df -h at the console during install time, we also see the
correct sizes for the partitions (at least they seem to be):

/dev/sdb1    761.7M   32.0K   761.7M   0%  /target/boot/efi
/dev/sdb2   73.2G    658.6M   68.8G  1%  /target
/dev/sdb4   807.9G  72.2M   766.8G  0%  /target/home

Also running parted in rescue mode, here's what we end up with:

Model: SEAGATE ST91000640SS (scsi)
Disk /dev/sdb: 1000GB
Sector size (logical/physical): 4096B/4096B
Partition Table: gpt
