A little question: why do you choose to not enable new fonts for "Documents" category?
Just to clarify, note that "Document" here is a GNOME only category for fonts and will be used in Yelp (help viewer), Devhelp (developer help viewer), maybe in Empathy chat window and other GNOME apps. It will not used as default font for OpenOffice.org documents, for instance.
