Now I'm replying to you, and it appears to still be in rich text mode. In further experiments in plain text mode (i.e. after having sent a plain text email to myself), I discovered that the mode it chooses when replying to a rich text message is in fact variable -- and random for all I can tell. Clearly it's using some criteria to pick the mode -- content, recipients, my usage history, who knows. I give up. ;)
