Gmail's composer top posts unless the text to quote is selected beforehand. The user has to click on '...' to see the quoted text. Changing the subject requires the user to select "Edit subject" from a menu, which switches to a larger composer. The composer also remembers the last choice of rich vs plain text, instead of letting the user set a default mode. Someone who switches modes may forget to switch back to plain text.
