the clojure issue is unrelated.
I can't reproduce this. update-alternatives {--display,--list} jar shows the
alternative. could you purge openjdk-7, and re-install?

Try: sudo apt-get install
$ dpkg -l openjdk-7-jdk | grep openjdk-7-jd
Actually, if you do

Then it works. But both reports above are a bug.
