I've found a sollution for this problem.
Just replace in /etc/fstab the UUID's with the correct ones
(you can get them by executing sudo vol_id -u /dev/[your-drive-name])
-OR-
if thant won't help, you can replace in /etc/fstab UUID=... with /dev
/[your-drive-name]

I tried to replicate this for posterity. The time I had seen this was on
a developers workstations after a dapper to edgy upgrade. I was not able
to replicate it with these steps. It's really a moot point though, as
edgy is no longer supported.
sudo ubuntu-vm-builder kvm dapper
# update /etc/fsta

I have a new Gutsy virtual machine, which I upgraded from a fresh Edgy
installation.
I, too can confirm this bug, and add the following info:
# cat /proc/mounts
rootfs / rootfs rw 0 0
/dev/root / ext3 rw,data=ordered 0 0
proc /proc proc rw,nosuid,nodev,noexec 0 0
sysfs /sys sysfs rw,nosuid,nodev,
I have an edgy workstation that shows this also. /proc/mounts contains a
full list of filesystems but /etc/mtab does not.

I can confirm this.
I just found this bug report (created the duplicate Bug #107845 first).
The same happened for me probably after upgrading Dapper to Edgy, and it
persisted after upgrade to Feisty. Apparently something goes wrong on
some hardware/drive/partition setups during the upgrade from Da

Hi,
no I ended up reinstalling from scratch. Before I did I discovered that
if I ran fsck it tries to run fsck.ntfs. Running the correct fsck
showed no errors.
Eventually I gave up & reinstalled
