Note that if I launch jackd with monitor enabled, then restart pulse,
the pulse monitor seems to works fine. So the problem seems to be
related to alsa, may be more specifically the alsa driver of my specific
card?

I just installed Oneiric, and I have the exact same bug.
I reproduced it with the steps described above (#3). Another way is:
* run paplay with a song (something long enough to go through the following
steps)
* open pavumeter, tab "Playback"

I re-installed big chunks of the pulseaudio system with no luck, but a
fresh install of the OS fixed it up... not sure what was actually
causing this, but it had been through a lot of updates since Alpha-3 so
I guess it's just one of those things.
Feel free to close this bug off...

So far not confirmed - on a fully updated Maverick, recording monitor of
a sound card works here.

I opened "Sound Recorder", "Pulseaudio Volume Control" (from the package
pavucontrol) and "Rhythmbox" (to provide a sound source).
It's actually somthing I should have put in papercuts that I don't see a
way to select the input device from within "Sound Recorder", but none
the less...
Start recor
Would you mind doing a couple of things:
1. Outlining a few steps to go through to reproduce this issue.
2. Following the instructions from here: https://wiki.ubuntu.com/PulseAudio/Log
and doing so while attempting to reproduce the bug?
