I'm afraid I don't think so. I'm just working on my computer, or
chatting, whatever, and suddenly the fan of the computer switches on, I
check the current processes and there's this telepathy-gabble with 100%
CPU usage.

It happens when I am connected to Facebook Chat. Sometimes it connects
correctly, other times it connects but an execution of telepathy-gabble
takes a whole processor, even though Facebook Chat and empathy work
fine.

I observe this problem every time I am on my computer (empathy runs as an
Start-up application), so I never "enable and disable the empathy tray icon",
as you say.
In fact, I use a computer at work, with maverick as well, and it works the same
way, no minimization when I click on the system tray

Eric it could be possible, I'm not sure because I don't use the power button
much often. In any case I think that the laptop also switches down correctly
when I close the lap.
