It sounds like you might have a local config file specifying HDMI as
your default sink. Try removing:
~/.config/pulse
and then reboot.
Separately, I notice your system seems to be some months out of date.
Please update it by running:
sudo apt update
sudo apt full-upgrade
and then reboot.

pulseaudio still trying to reproduce audio to HDMI without the HDMI

This is the intended default behaviour of Ubuntu; to automatically
switch to the audio device most recently plugged in.
To disable this feature, please edit /etc/pulse/default.pa and comment
out the line:
load-module module-switch-on-connect
making it:
# load-module module-switch-on-connect

I had the same problem on an Raspberry Pi4 4GB.
Uninstalling the avahi-deamon wokrs just fine. Even if this may not the cause
of the problem, my Pi is running for the last 12 days without a problem.
