if i comment out the "media" lines in printers.conf and restart the service..
the printer error goes away.. but as soon as i send a test print to the printer

Those stack traces in the log are unfortunately likely unrelated to any
gnome-shell freeze. And I assume the freeze is the main issue that
you're reporting(?).
