I don't know why it has a different behaviour with GDB. Can you use:
$ export EMPATHY_DEBUG=all
and try again with GDB ?
Do you start empathy in a separate D-Bus session, or normally?

empathy currently segfaults at startup, systematically.
What's strange is that under gdb, it just doesn't start:
