aTeX Error: File `sagetex.sty' not found." which is far more likely to
be helpful to them. And the users who haven't installed Sage will never
miss those files.

remove the directories /usr/share/doc/texlive-doc/latex/sagetex/ and
/usr/share/doc/texlive-latex-extra-doc/latex/sagetex/ (and all files in
them, of course) from texlive-latex-extra-doc.
