I have the same SCSI controller AIC-7XXX on my Dell 2400 PowerEdge and I was able to load Redhat 7.3 without any problems.

I see the old aic7xxx driver module is included in the kernel after I installed, but I don't know if it is included in the installer kernel. You might also try temporarily disconnecting your Jaz drive and/or your tape drive and see if the kernel panic still happens.
