Something's running you out of resources (memory, number of processes,
etc.). My suggestion would be to run a script that monitors resource
usage every minute or two and log it, to give you a snapshot of what
was going on right before the failure.
It may be time to look at breaking out some of your services to other
systems, if you're hitting the ceiling occasionally.
