Depending on your system, you'll probably want to save the following:
/etc/passwd
/etc/group
/etc/shadow
/etc/gshadow
/etc/sendmail.cf
/etc/aliases
/etc/aliases.db
This may or may not be a complete list, but it's at least a good start.
