I'm not well versed but I just figured out how to do what you want
yesterday so I identify with your plight.  Here's the deal:

This actually does work but there's a secret.  You can't edit and copy
the chart at the same time.  If you double click on the chart in the
spreadsheet, you get a solid outline around it and you are in edit
mode.  You don't want this.  

If you click on it once and only once, you don't get the solid
outline, you just get little boxes at the corner.  At this point you
have selected the chart but you are not editing the chart.  Now copy
it and paste it into a new Drawing (started from desktop).  You will
find that you get the chart you copied and if you double click on it,
you will be able to edit its properties.

You can probably do this with a document or presentation as well but I haven't tried 
it yet.

Gnumeric is coming along.  Remember its years behind Star Office.  Be
patient.  Once bonobo is implemented in a standard GNOME release,
you'll get you're charts.  I think (hope) it will get better at
handling big spreadsheets, too.  But I've had reasonably good
experiences so far with Star Office.  It's about as close as you'll
get to a free Excel/Lotus for linux at the moment.
